Eggs in a Soft Pretzel Nest

Ingredients : 1 to 2 portions

5.5 oz. San Diego Pretzel Co. soft Bavarian pretzel

1 tablespoon butter

2 eggs

Pretzel salt

 

Method: Melt butter in a skillet over medium heat.  Add the pretzel, bottom-side down, and gently place two cracked eggs into the pretzel taking care not to break the egg yolks.  Cook for a couple of minutes until the egg whites set.   Baste the top of the pretzel with butter from the pan with a pastry brush, and finish cooking the top of the eggs for about 10 seconds under a preheated broiler.   With a spatula, remove pretzel from the skillet place on a serving plate and serve.  Serve with a side of pretzel salt.
