Pretzel Pudding

Ingredients : serves 12

3 – 5.5 oz San Diego Pretzel Co. Bavarian pretzels

4 eggs

1 cup granulated sugar

1 ½ cups 1% cottage cheese

2 cups plain lowfat yogurt

1 tablespoon pure vanilla extract

2 teaspoons cinnamon

¼ teaspoon salt

¼ cup dark raisins

¼ cup golden raisins

2 tablespoons melted butter

 

Method:  Preheat oven to 400 degrees.  Cut pretzels into small 1 inch pieces, and set aside.  In a large mixing bowl, mix the eggs, sugar, cottage cheese, yogurt, vanilla, cinnamon, and salt together with a wire whisk.  Fold in the raisins and cut pretzels.   Spread the melted butter along the bottom and sides a 12 inch round baking pan.  Pour the pretzel mixture into the pan. Bake at 400 degrees for about 40 to 45 minutes until the top is crisp and golden brown.   Serve warm with whipped cream.
