Soft Pretzel with Tarragon Scrambled Eggs and Sautéed Zucchini

Ingredients: 1 to 2 servings

5.5 oz. San Diego Pretzel Co. Bavarian soft pretzel

1 teaspoon melted butter

Monterey steak seasoning (can be purchased at Costco)

3 eggs

1 Tablespoon milk

1 Tablespoon fresh cut tarragon

1 zucchini sliced into ¼ inch thick oval pieces

1 Tablespoon olive oil

Kosher salt

 

Method:  Preheat oven to 400 degrees.  Brush pretzel with butter and sprinkle lightly with Monterey Steak seasoning.  Bake pretzel in oven for 4 minutes.  While pretzel is baking, make scrambled eggs by beating the eggs, milk, and most of the tarragon together, reserving some for garnish.  Cook egg mixture in a heated non-stick skillet over a moderately high flame.   Set eggs aside and quickly sauté zucchini on just one side in the olive oil in the same skillet over high heat.  Sprinkle zucchini with salt.   Place baked pretzel on a serving plate, place scrambled eggs in the center, and zucchini, brown side up, around the pretzel.  Garnish eggs with reserved tarragon and serve.
